I didn't analyze them prior to popping one in my mouth and found that I was immediately delighted to have eaten a delicious Thin Mint (you know, of the Girl Scout Cookie family). At second glance, after I'd finished off two or three, I realized that these were not out of a box, but something she'd made. Color me intrigued at this point.
To my surprise, I learned a very simple equation for these amazing little cookies, which I've lovingly named "Fat Mints."
Ritz Crackers + Melted Andes Creme de Menthe baking chips = Fat Mints
Seriously, that's it. You melt the baking chips, dip the crackers, and let them set up.
I've never been much of a fan of Ritz crakers - this may be the dawn of a new day.
